Soya Bean Curry | High Protein Soya Curry – Easy Indian Style Recipe

 Ingredients (Serves 4)

  • 1 cup soya chunks (soya beans nuggets)
  • 2 medium onions, finely chopped
  • 2 medium tomatoes, pureed
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 2 green chilies, slit
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 1 tsp turmeric powder
  • 1½ tsp red chili powder
  • 2 tsp coriander powder
  • 1 tsp garam masala
  • 2 tbsp oil or ghee
  • Salt to taste
  • Fresh coriander leaves for garnish

👩‍🍳 Preparation

  1. Boil the Soya Chunks
    • Heat water with a pinch of salt. Add soya chunks and boil for 5 minutes.
    • Drain, rinse in cold water, and squeeze out excess water. Keep aside.
  2. Make the Masala Base
    • Heat oil in a pan. Add cumin seeds and bay leaf.
    • Add onions and sauté until golden brown.
    • Stir in ginger, garlic, and green chilies. Cook for 1–2 minutes.
  3. Add Tomatoes & Spices
    • Add tomato puree, turmeric, chili powder, and coriander powder.
    • Cook until the oil separates from the masala.
  4. Cook the Curry
    • Add boiled soya chunks and mix well with the masala.
    • Pour 1½ cups water, cover, and simmer for 10 minutes.
  5. Finish & Serve
    • Sprinkle garam masala and stir.
    • Garnish with fresh coriander leaves.
    • Serve hot with steamed rice, chapati, or naan.
