Soya Bean Curry | High Protein Soya Curry – Easy Indian Style Recipe
Ingredients (Serves 4)
- 1 cup soya chunks (soya beans nuggets)
- 2 medium onions, finely chopped
- 2 medium tomatoes, pureed
- 1 tsp ginger paste
- 1 tsp garlic paste
- 2 green chilies, slit
- 1 tsp cumin seeds
- 1 bay leaf
- 1 tsp turmeric powder
- 1½ tsp red chili powder
- 2 tsp coriander powder
- 1 tsp garam masala
- 2 tbsp oil or ghee
- Salt to taste
- Fresh coriander leaves for garnish
👩🍳 Preparation
- Boil the Soya Chunks
- Heat water with a pinch of salt. Add soya chunks and boil for 5 minutes.
- Drain, rinse in cold water, and squeeze out excess water. Keep aside.
- Make the Masala Base
- Heat oil in a pan. Add cumin seeds and bay leaf.
- Add onions and sauté until golden brown.
- Stir in ginger, garlic, and green chilies. Cook for 1–2 minutes.
- Add Tomatoes & Spices
- Add tomato puree, turmeric, chili powder, and coriander powder.
- Cook until the oil separates from the masala.
- Cook the Curry
- Add boiled soya chunks and mix well with the masala.
- Pour 1½ cups water, cover, and simmer for 10 minutes.
- Finish & Serve
- Sprinkle garam masala and stir.
- Garnish with fresh coriander leaves.
- Serve hot with steamed rice, chapati, or naan.

- For a creamier curry, add 2 tbsp yogurt or cashew paste while cooking.
- You can add peas or potatoes for extra flavor and texture.
- Adjust spice levels to your taste – this recipe is medium spicy.
